Recipes – Mrs. M. A. Sewell

When the Skidmore News issued a call for rationing-friendly recipes in 1918, Skidmore’s cooks rose to the occasion. Here is a contribution from Mrs. M. A. Sewell, as published in the March 21, 1918 Skidmore News, page 1:

Corn Muffins
1 cup cornmeal, 1 tablespoon corn starch, 2 tablespoons cold, cooked rice, 1/2 teaspoon salt, 1 heaping teaspoon baking powder, mix with thin cream, beat thoroughly, bake in moderate oven about 20 minutes. If iron gem pans are used besure and have them hot before batter is put in.
